Stuffed Green Peppers

Last night for supper I made these wonderful Stuffed Green Peppers. I found the recipe at allrecipes.com. You can find the original recipe here.



Stuffed Green Peppers

Original Recipe Yield 6 servings

Ingredients

6 green bell peppers
salt to taste
1 pound ground beef
1/3 cup chopped onion
salt and pepper to taste
1 (14.5 ounce) can whole peeled tomatoes, chopped
1 teaspoon Worcestershire sauce
1/2 cup uncooked rice
1/2 cup water
1 cup shredded Cheddar cheese
2 (10.75 ounce) cans condensed tomato soup
water as needed

Directions

1.Bring a large pot of salted water to a boil. Cut the tops off the peppers, and remove the seeds. Cook peppers in boiling water for 5 minutes; drain. Sprinkle salt inside each pepper, and set aside.
2.In a large skillet, saute beef and onions for 5 minutes, or until beef is browned. Drain off excess fat, and season with salt and pepper. Stir in the tomatoes, rice, 1/2 cup water and Worcestershire sauce. Cover, and simmer for 15 minutes, or until rice is tender. Remove from heat, and stir in the cheese.
3.Preheat the oven to 350 degrees F. (175 degrees C). Stuff each pepper with the beef and rice mixture, and place peppers open side up in a baking dish. In a medium bowl, combine tomato soup with just enough water to make the soup a gravy consistency. Pour over the peppers.
4.Bake covered for 25 to 35 minutes, until heated through and cheese is melted and bubbly.



My hubby loves stuffed peppers and said these were the best he had ever had :) The kiddos even loved them... I had extra filling left over so I just put it in a dish, sprinkled some cheese on the top and they loved it :P It was really easy to make and so yummy.

Fun times in the Mountains, Part 2

The Mountains are a very special place for my family. My parents bought their place when I was pregnant with Josh, so both kids have been going since they were newborns. One special place we always visit is the Dairy Ace. It is a small place that has been around for 5o+ years. It has a U shaped eating counter and only seats 12 at a time. The kids love to go eat there every time we are in town. They have the best hamburgers and milk shakes.

The Mountains are full of beautiful creeks and waterfalls. There is one particular water hole that is very popular near my parents house. They call it the Blue hole because the water is so cold. The kids have always like swimming in the deep part but this trip they got brave. They decided it was time to jump off the big rock. I couldn't believe my babies were going to do it!


Here they are looking the situation over. Do I really want to do this? I don't think it was the actual jumping off the rock... I think it was the idea of how cold the water was.... it was freezing!

They loved it and jumped about 50 more times!!!! We couldn't get Daddy to do it... he said he didn't have his bathing suit on..... chicken :)


My parents have a little dog that absolutely LOVES Annalee..... he follows her around the whole time we are there and wines whenever she leaves him. This is always how you found them before bed time..... precious.

Fun times in the Mountains, Part 1


This summer has been a busy one for us but we were able to slip away for a long weekend to visit my parents in the Mnts. They live outside of Asheville, NC. The temperature is so much cooler and we always have a blast when we are there.
The trip is never complete without at visit to the creek to go "Creek Stomping". We have taken the kids to this same creek since they were babies. It is always freezing cold, but they do not care!!! They have a ball. This is also where the local churches hold their baptism services.

This is the view off of my parents front porch.... can you say "Heaven"?

There are always lots of butterflies at the creek drinking. When the kids where little they would catch them with their butterfly nets.... now they have moved on to this......

Remember me?



Sadly the reality that summer is over has hit me..... where has summer gone? We have been so busy this summer with our daughter and have had the time of our lives in the process... More on that to come.



First....


A while back I did this post on "rethinks" . I promised I would post the afters very soon..... well..... that was back on June 24th. Can you believe that? How bad of a blogger am I?! I guess that saying "better late than never" can apply here for sure!!!!


I will go ahead and post the before and the after so you can get a better idea.


Yucky, old Urn that has been in my MIL's basement for years....



Cute little Urn that now holds some pretty pepperoni plant on our deck table. total...$FREE, already had the black spray paint and the plant. :)



Not so bad lamp found at Goodwill..... I'm just not into the "gold" phase anymore....



Nice little buffet lamp that is now in my kitchen :) I traded lamp shades with a lamp in my bedroom and bought a new finial to finish it off. Total....$10.00 :)


I have a few other projects that were completed around the house this summer..... I will do my best to let you in on those later :)
