Stuffed Green Peppers
Stuffed Green Peppers
Original Recipe Yield 6 servings
Ingredients
6 green bell peppers
salt to taste
1 pound ground beef
1/3 cup chopped onion
salt and pepper to taste
1 (14.5 ounce) can whole peeled tomatoes, chopped
1 teaspoon Worcestershire sauce
1/2 cup uncooked rice
1/2 cup water
1 cup shredded Cheddar cheese
2 (10.75 ounce) cans condensed tomato soup
water as needed
Directions
1.Bring a large pot of salted water to a boil. Cut the tops off the peppers, and remove the seeds. Cook peppers in boiling water for 5 minutes; drain. Sprinkle salt inside each pepper, and set aside.
2.In a large skillet, saute beef and onions for 5 minutes, or until beef is browned. Drain off excess fat, and season with salt and pepper. Stir in the tomatoes, rice, 1/2 cup water and Worcestershire sauce. Cover, and simmer for 15 minutes, or until rice is tender. Remove from heat, and stir in the cheese.
3.Preheat the oven to 350 degrees F. (175 degrees C). Stuff each pepper with the beef and rice mixture, and place peppers open side up in a baking dish. In a medium bowl, combine tomato soup with just enough water to make the soup a gravy consistency. Pour over the peppers.
4.Bake covered for 25 to 35 minutes, until heated through and cheese is melted and bubbly.
My hubby loves stuffed peppers and said these were the best he had ever had :) The kiddos even loved them... I had extra filling left over so I just put it in a dish, sprinkled some cheese on the top and they loved it :P It was really easy to make and so yummy.

They loved it and jumped about 50 more times!!!! We couldn't get Daddy to do it... he said he didn't have his bathing suit on..... chicken :)
My parents have a little dog that absolutely LOVES Annalee..... he follows her around the whole time we are there and wines whenever she leaves him. This is always how you found them before bed time..... precious.

Remember me?
First....
A while back I did this post on "rethinks" . I promised I would post the afters very soon..... well..... that was back on June 24th. Can you believe that? How bad of a blogger am I?! I guess that saying "better late than never" can apply here for sure!!!!
I will go ahead and post the before and the after so you can get a better idea.

Not so bad lamp found at Goodwill..... I'm just not into the "gold" phase anymore....
Nice little buffet lamp that is now in my kitchen :) I traded lamp shades with a lamp in my bedroom and bought a new finial to finish it off. Total....$10.00 :)
I have a few other projects that were completed around the house this summer..... I will do my best to let you in on those later :)
